【目的】研究不同砧木对酿酒葡萄马瑟兰果皮花色苷种类和含量的影响。【方法】以2018年嫁接的酿酒葡萄马瑟兰为材料,砧木分别为SO4、5BB、3309M和101-14,以未嫁接的为对照,利用LCMS/MS法测定果皮花色苷的种类和含量。【结果】不同砧木嫁接的马瑟兰葡萄果皮中有48种花色苷种类(锦葵苷8种、飞燕草苷12种、矮牵牛苷8种、芍药苷7种、花青苷9种、天竺葵素4种)和11种非花色苷(黄酮5种、黄烷酮2种、原花青素4种)种类。马瑟兰果皮中以锦葵苷、飞燕草苷、矮牵牛苷、芍药苷、花青苷为主,锦葵苷占50%左右,飞燕草苷约占33.00%,并检测到了极少量的天竺葵素。花色苷单体中,锦葵色素-3-O-葡萄糖苷含量最高,约占45%。【结论】砧木SO4下调了总花色苷含量,比对照减低了11.860%,但与对照间不存在极显著差异,砧木5BB、3309M、101-14分别比对照上调了26.621%、2.759%和12.629%,M/3309M、M/101-14花色苷含量与对照间无极显著差异,M/5BB的总花色苷含量与对照间存在极显著差异。
