摘要: [目的]新疆酸奶中菌种资源丰富,因地域性差异,其中所含乳酸菌也有所不同,进一步了解乌昌地区菌种资源,为该区酸奶发酵剂的开发提供参考.[方法]采集新疆乌昌地区酸奶样品,采用传统形态学、生理生化特性方法对分离并纯化出的20株乳酸菌进行鉴定.[结果]经传统形态学、生理生化特性方法鉴定为7株德氏乳杆菌乳亚种(L.delbrueckii subsp.lactis),3株干酪乳杆菌(L.casei),2株发酵乳杆菌(L.fermentum),3株乳酸乳球菌(L.lactis subsp.lactis),2株乳酸粪肠球菌(Enterococcus faecalis),1株唾液链球菌(S.salivarius),2株未鉴定到种.[结论]结合生理生化鉴定结果,对样品中分离出的CJ2、QT1、QT2、DBC1四株乳酸菌进行16S rDNA基因序列分析,构建系统发生树.经分析QT2和DBC1两株乳酸菌为Lactobacillus delbrueckii subsp.indicus,CJ2和QT1两株为Enterococcus faecalis.
