【目的】研究不同贮藏方式对白菜品质及活性氧代谢的调节作用,为白菜采后贮运方面的新工艺提供技术支持。【方法】采用带根捆叶、削根捆叶、带根散叶、削根散叶的吊挂式方式贮藏,研究吊挂式窖藏对白菜腐烂及发病的影响。【结果】带根捆叶处理能延缓白菜的腐烂率、VC的降低及粗纤维的合成,提高了POD、SOD、APX的活性,减少了硝酸盐和亚硝酸盐的产生。贮藏90 d时带根捆叶处理组中VC的含量为0.45 mg/100g,可溶性蛋白的含量为0.88 mg/g。POD、SOD、APX、CAT活性分别为12.43、0.83 、25.12和1.21 U,分别是对照组的1.35、1.44、1.56、1.69倍。【结论】带根捆叶处理能较好的维持白菜的采后品质,提高了白菜的抗氧化能力,延缓了白菜腐烂,延长了白菜货架期。
